How it happened
Gauzy earned her PhD in Amsterdam and made Thailand her home. An avid gin & tonic enthusiast, she always sought out the finest imported tonics — never imagining she'd one day craft her own.
When Covid-19 hit in 2020, global supply chains collapsed and imported tonic water vanished from Bangkok's shelves. The shortage sparked a realisation: Thailand — a country overflowing with extraordinary herbs and botanicals — had no local tonic water brand at all.
Gauzy brought her scientific background to bear, partnering with Kasetsart University to develop formulas rooted in Thai botanical heritage — Pegha, cardamom, organic citrus, and real quinine. Bitter Water launched in 2020, and has been growing ever since.

A PhD graduate from Amsterdam with a lifelong love of gin & tonic, Gauzy turned a pandemic-era shortage into Thailand's first homegrown craft tonic brand. Working alongside Kasetsart University, she developed three botanically distinct formulas that celebrate Thailand's extraordinary natural heritage and prove that the best tonic was always growing here.
